strawberry static: a lacto-fermented non-alcoholic mocktail with strawberry guava hiyo
paradise, perfected. we teamed up with @drinksbyevie to bring you a berry-forward, bright, and bubbly sip without the buzz. perfect for peak patio season, the strawberry static is a refreshing mix of sweet strawberry, zesty citrus, and tropical guava, finished with a "you made that?" foam. pinkies up.
this is a more elevated mocktail with two prepared components – a lacto-fermented strawberry juice and a salted guava foam. plan ahead: the lacto-fermented strawberry juice takes 2–4 days to ferment.
ingredients
for the lacto-fermented strawberry juice
- 16 oz fresh strawberries, hulled
- 2% salt by total juice weight (you should yield 9–10 oz of juice), so anywhere from 4.5–5 g kosher salt
for the salted guava foam
- ½ oz agave
- 4 oz guava nectar
- ½ oz lime juice
- 1 egg white
- pinch of kosher salt
for the cocktail
- ½ oz agave
- 1.5 oz lacto-fermented strawberry juice (from above)
- ½ oz lime juice
- 1.5 oz non-alcoholic tequila
- 4 oz strawberry guava hiyo
- salted guava foam (from above), for top
- strawberry powder, for garnish*
directions
make the lacto-fermented strawberry juice (2–4 days ahead)
blend all ingredients together and transfer to a clean mason jar or fermentation-safe container, leaving about 25–30% headroom. seal loosely or burp daily to release pressure. let ferment at room temperature for 2–4 days. the longer it sits, the funkier, tangier, and more bubbly it becomes.
make the salted guava foam
add all foam ingredients into a mixing glass (strain the juices to get rid of pulp) and mix to combine. pour the mixture into a cream whipper, charge with an n2o charger, and let it sit in the fridge for 30 minutes before dispensing.
build the drink
add a tall or large-volume rocks glass to the freezer while you build the cocktail. to a shaker, add the agave, lacto-fermented strawberry, lime juice, and non-alcoholic tequila. add ice and shake briefly. strain into the frosted glass over fresh ice. top with strawberry guava hiyo. dispense the foam over top. garnish with strawberry powder.
*note: you can buy dehydrated strawberry powder, or you can buy dehydrated whole strawberries, crush them, and sift them. crushing whole strawberries has a brighter color and flavor.
